Sweet Potato & Chickpea Patties
- 500g sweet potato peeled, cut into 2cm pieces
- 420g can chickpeas, drained & rinsed
- 1/3 cup quinoa (cooked)
- 2 garlic cloves, crushed
- 1 egg, lightly beaten
- 3 teaspoons extra-virgin olive oil
- pinch of sea salt
- Place sweet potato onto a microwave-safe plate in a single layer. Cover. Microwave for 3 to 5 minutes on HIGH (100%) power or until just tender. Drain. Transfer to a bowl. Add chickpeas. Mash mixture until smooth.
- Add quinoa, garlic, egg, and salt to sweet potato mixture. Mix until well combined. Using damp hands, form mixture into 8 x 1.5cm-thick patties.
- Heat oil in a large non-stick frying pan over medium heat. Cook patties for 3 to 4 minutes each side or until golden and heated through. Serves 4.
7 months ago something life changing happened to me.
