Sample Recipe:

Sweet Potato & Pumpkin Soup


  • 2-3 sweet potatoes
  • 1/3 cup olive oil
  • 1 sweet onion, cut into large chunks
  • 1 bulb of garlic
  • 1/2 tablespoon olive oil
  • 1/2 cup pumpkin puree (canned or fresh)
  • 2-3 cups of low-sodium, low-fat chicken broth
  • 2 tablespoons fresh lime juice
  • 1 cup fresh sweet corn cut off the cob (optional)
  • Sea salt and freshly ground black pepper


Preheat oven to 350°F (180°C). Coat a large roasting pan with olive oil. Cut the sweet potato in half and place in pan with vegetables. Bake for 40 minutes or until tender. Put pan on top of stove and add canned pumpkin, 2-3 cups of chicken stock (for the consistency you like), lime juice and bring to a boil. Reduce heat and simmer slowly for 15-20 minutes.  Cool a little then use a hand or upright blender to puree until smooth. Salt and pepper to taste.
