However, the difference is that these recipes replace the bad ingredients (like butter and white flour) with healthier alternatives (such as coconut oil and gluten free flours). Breakfast Berry Parfait
- 2 cups of strawberries
- 2 cups of blueberries
- 3 cups low fat natural yogurt
- 1 cup of natural rolled oats
- ½ cup of chopped almonds
- 2 tablespoons of flax seed
- ½ cup of natural shredded coconut
- ½ teaspoon of cinnamon
- Mix oats, coconut & almonds and spread on a baking sheet and bake in the oven for 20 minutes at 160°C (325°F) or use a non-stick pan and toast, stirring constantly to prevent burning.
- Remove and stir in the cinnamon and flax seed.
- Purée or gently mash the berries together.
- In four parfait glasses, alternate layers of the berry mixture, yogurt and the toasted oats and coconut. Top with a strawberry!
