Roasted Hazelnut with a Chocolate Mousse Centre and Hazelnut Cream Frosting
Ingredients for Cupcake:
- ½ cup coconut oil, melted
- ½ cup unsweetened applesauce
- 3 eggs
- ¾ cup semi skim milk
- 1 teaspoon vanilla extract
- ¼ cup cacao powder
- 1 teaspoon stevia powder
- ½ cup hazelnut meal
- 1 ½ cups gluten free plain (all purpose) flour
- 1 ½ teaspoons aluminium free baking powder
- 18 small squares of dark chocolate
- Preheat the oven to 170°C & prepare a cupcake tray by lining it with papers.
- Using an electric mixer blend all of the wet ingredients.
- In a separate bowl, sift the cacao, stevia, plain (all purpose) flour & aluminium free baking powder then mix in the hazelnut meal.
- Still using the electric mixer blend the flour mixture into the wet ingredients until the mixture is smooth.
- Place the mix into prepared trays then insert one square of chocolate into each cupcake.
- Bake for approx. 20 minutes or until the cake springs back when gently touched on the top.
Ingredients for Frosting:
- ¼ cup hazelnut butter (if not available use almond)
- 1 tablespoon agave syrup
- 1 pinch of salt
- ½ teaspoon vanilla extract
- 1 tablespoon coconut milk
- Using an electric mixer whip together the nut butter & agave until smooth.
- Add the salt, vanilla & coconut milk until rich & creamy.
